「旅する餃子」第3回目はスペイン編。
バル文化が盛んなスペインでは、ワイン片手に軽くつまめるピンチョスというおつまみが人気となっている。今回はそんなピンチョスを餃子にしてみた。

バルはスペイン人の人生に欠かせない場所。
スペインといえばアントニオ・ガウディやパブロ・ピカソ、サルバドール・ダリ、ジョアン・ミロを生んだ芸術の国。クリエイティビティたっぷりのお国柄は食にも息づいている。
バルセロナあたりで食べる新鮮な魚介たっぷりのパエリアは極上だし、ワインとともに楽しむタパスもカジュアルで美味しい。生ハムもいけるし、暑い日はガスパチョを飲んで生き返る。お隣のイタリアやスペインと比較して、グルメでは控えめなスペインだが、いやいや芸術的な美味しさのものがたくさんある。
そもそもスペインにはバル文化が根付いている。国内に数十万件ものバルがあるといわれていて、食事の前にカウンターで軽くつまみながら飲むというスタイルが定着している。夕暮れともなるとどこも人であふれかえり、食とお喋りに夢中になっている。パリっ子の人生にカフェが欠かせないように、スペインの人々にはバルが欠かせないんだと思う。
では、そんなバルに餃子があったらという妄想を膨らませて。今回、松井が創作したのはピンチョス餃子。さてさて、どんな味に仕上がっているのだろうか。

Bar culture is deeply rooted in Spain. The country is said to have hundreds of thousands of bars, where it's customary to nibble on snacks at the counter before meals. As dusk falls, places everywhere are bustling with people engrossed in food and conversation. Just as Parisians can't live without their cafés, Spaniards can't live without their bars
So, let's imagine what kind of dumplings a bar like that might serve. This time, Matsui created pintxo dumplings. How do they taste, you wonder?

スペインを妄想して生まれた餃子にはワインがあう。
スペインのなかでも美食都市として知られているのが、バスク地方のサンセバスチャンやビルバオ。ここで有名なのがピンチョスだ。生ハムやオリーブなど様々な食材を小さなパンにのせて串や楊枝をさしたもの。ひとくちで食べられる気軽さもあり、バルでの人気メニューとなっている。そんなピンチョスを餃子にしたら。
まず皮にはバルのおつまみによくかかっている、スモークしたパブリカをパウダー状にしたものを使用。ほんのりとスペインが香る。餡には豚肉と生のベーコン。そもそもスペインはEU最大の豚肉輸出国で、豚肉を使った料理が多くある。さらにオリーブでスパニッシュな味を演出しながらスモークパプリカと塩を振りかける。
さて、ピンチョスといえばトッピングだ。ピンチョス餃子ではトッピングにフルーツトマトとオリーブ、パブリカのマリネ、ベビーリーフなどが用意されている。餡に肉が混ざっているから、トッピングは野菜で軽く。ピンチョスではバランスの良さが大切。
今回の餃子は、口を閉じずに焼いた上にトッピングをのせたものと、口を閉じて焼き目をつけたものの2種類。

確かに、これは餃子であり、ピンチョスである。どっちつかずということではなく、調和がとれた美味しさがある。まさか餃子を食べてスペインを感じるとは。これはワインにあいそうだ。
