Savoring the essence of nature-rich Noto Peninsula.

When people think of Noto Peninsula now, they may recall the recent earthquake. But it has long been a land of breathtaking natural beauty. Facing the Sea of Japan—fierce in winter, serene in summer—its landscape includes the stunning Senmaida rice terraces. One look at this scenery tells you everything: Noto is rich in seafood, mountain delicacies, vegetables, and rice, all delicious.
Noto is also the birthplace of fermented foods. Its rich ingredients and long winters led to the natural evolution of preservation and fermentation techniques, further enhanced by an abundance of rice and salt—both essential for the process. This time, a special batch of dumplings was crafted using ingredients from Noto and across Ishikawa Prefecture. So, how do they taste?

This region, rich in ingredients, is recognized as a Globally Important Agricultural Heritage Site. These dumplings, presented in the hassun style, showcase the unique flavors of Ishikawa and Noto. The filling features tender Kano-gani crab from Kaga and Noto, seasoned with crab miso and Noto salt. Wrapped in dough infused with ishiri (fermented fish sauce) and red turnip juice, they are gently steamed to perfection. Accompaniments include Kano-gani and yuzu salad, Tsubaki-zushi made with Noto rice, deep-fried lotus root, blanched mitsuba greens, and ginkgo nuts.
Noto salt is crafted from deep-sea water or through the traditional ryūka-shiki salt field method. Rich in minerals, it has a smooth texture and a mild, well-rounded flavor.
Noto rice, a premium brand, thrives in coastal areas touched by sea breezes or in mountain regions with pristine water. Glossy and slightly sticky, it has a chewy texture and natural sweetness.
Now, let’s dig in. These dumplings, infused with Japanese flavors, offer a refreshing twist. The dumplings are excellent, but the side dishes take the experience to another level. Once again, an outstanding meal—thank you for the feast!
