Germany: A Country Full of Fascinating Charms.

What do you picture when you think of Germany? Maybe the storybook beauty of Neuschwanstein Castle along the Romantic Road? It’s truly magical.
Germany stretches from the North Sea to the Baltic, with rolling hills in the center and the rugged Alps in the south. The Rhine and Elbe rivers wind through it all with quiet grandeur. German landscapes are often a blend—sometimes dramatic, sometimes elegant. Surrounded by such striking and emotional scenery, no wonder that great composers like Bach, Beethoven, and Mendelssohn came from here. Landscapes, after all, shape the soul.

Germany’s food culture is rich with sausages, hams—and of course, beer.
Munich’s world-famous Oktoberfest draws over six million visitors a year. People sing, dance, and raise their glasses together in celebration. Even Germany, known for its seriousness and discipline, lets loose on this occasion.

White Asparagus Dumplings Bursting with Flavor.

A springtime staple in Germany, white asparagus—Spargel—is in season from mid-March to June 24, St. John’s Day. When market stalls turn pale with bundles of it, people know: spring is here.Taking inspiration from this beloved white asparagus, this issue’s dumpling recipe was born.
The dumpling skins are tinted green from spinach and fresh sage kneaded into the dough. The filling blends chicken, sage, and of course, white asparagus. To make them:

1.Boil water with salt, sugar, and butter, then blanch the asparagus.
2.Mix chopped asparagus, chicken, sage, and salt.
3.Wrap in dough, shape like candies, and steam.
4.Prepare a hollandaise sauce from egg and butter and spread it on the plate.
5.Arrange the dumplings and boiled asparagus in alternating rows, finishing with crisp fried sage.

So—how does it taste?
Inside, the steamed dumplings hold tender, juicy white asparagus. The rich hollandaise sauce elevates every bite, while fresh sage adds a bright finish.
It’s the taste of German spring—best enjoyed with a cold beer.
