A pairing of unique sweets and domestic wine brings cool,
delicious happiness to everyone.
Under the theme of “Chill Out with Food,” patissier Nakamura came up with a pairing of unique sweets and wine.
First, grilled eggplant ice cream. This ice cream, which tastes remarkably like grilled eggplant and is surprisingly delicious, is made using the étuvée method, utilizing only the moisture from the ingredients. Typically, vanilla ice cream’s moisture is 100% from milk, but here, 50% is from grilled eggplant. But why eggplant?
“Eggplant is widely consumed in Europe. I wanted to use this popular ingredient in a dessert. Grilling brings out the best flavor in eggplant, so I turned it into ice cream.“one.” Sharing her love of music with others after the stage is her thing. Another confection features a scone served with clotted cream mixed with honey. But this is no ordinary scone. “This scone is made using only the moisture from strawberries. It doesn’t get dry and has a rich flavor. The acidity enhances the sweetness,” Nakamura explains. Next to the scone is rhubarb jam with a touch of rose.
These original sweets are paired with a domestic wine. The playful sweetness of the confections complements the mature flavors of the wine, producing a delightful experience.

They were the first to introduce to Japan clotted cream, used in British afternoon tea, and sour cream, popular in Russia, along with various other products. Nakazawa Dairy’s consistent philosophy since its founding still lives on in its corporate culture, and they continue to create delicious products and flavors.
