Picking chestnuts marks the start of autumn in avellino.
Inland from Naples, Avellino’s chestnut groves blanket the Apennine foothills. Here, IGP-certified Montella chestnuts—famed for their delicate sweetness—have sustained mountain life since ancient times. Dried, ground into flour, or transformed into smoke-cured castagne del prete, chestnuts provided crucial winter food.
Combined with wild porcini from local forests and savory pork, these autumn staples are wrapped into dumplings—a dish capturing southern Italy’s harvest in a single bite.

Wrapping mountain autumn in a chestnut shell.
Chestnut, pork, and porcini dumplings in cocoa-infused dough are paired with wine-sautéed mushrooms, chestnuts, and crispy kale—a rich plate of mountain autumn.
①Mix flour, cocoa powder, and water, then knead into dough to form the wrappers.②Finely chop roasted chestnuts, pork, porcini, and garlic. Season with salt and pepper, then mix into a filling.③Wrap the filling in dough and pan-fry until golden and fragrant.④Sauté chestnuts and mushrooms in olive oil and red wine, then serve beside the dumplings with crispy fried kale.
So, how does it taste?
One bite reveals rich pork, deep porcini, and gentle chestnut sweetness, balanced by the bitter edge of cocoa dough and kale.Pair with Taurasi, Avellino’s bold red. Aglianico’s acidity cuts the pork while chestnut softens its tannins. A bite, a sip—a subtle buzz taking you through an Avellino autumn.
