ガスパチョと焼き蛸の餃子~スペイン編~
白い街を照らす太陽、洞窟に響くフラメンコの靴音。南のアンダルシア。
深い緑を濡らす雨、入り組んだ海岸を満たす潮の香り。北西のガリシア。
さて今回は、遠く離れた二つの風土と味を、ひと皿の餃子でめぐる旅。


南の光から、北の海へ。
アンダルシアに着くと、まず白い壁がまぶしい。強い日差しを跳ね返す家々、オレンジの木陰、噴水の音。グラナダの丘に建つアルハンブラ宮殿では、細い水路が中庭を走り、池が柱廊と空を映す。壁の幾何学模様やアラビア文字は驚くほど細かく、石と漆喰でできていることを忘れそうになる。
8世紀から15世紀末まで、イベリア半島にはいくつものイスラム王朝が栄えた。アルハンブラは、その最後となったナスル朝が築いた宮殿。その後も、イスラム文化の建築や学問、農業の知恵は残り、スペインの文化と混ざり合っていった。
サクロモンテ地区にあるのは、洞窟のタブラオ。すぐ目の前でフラメンコが始まる。ギター、歌、手拍子。そして踊り手の靴が床を打つたび、音が洞窟の壁に跳ね返る。フラメンコには、ロマの人びとの喜び、痛み、恋、怒りなど、人生のすべてが表現されている。
そこから国を北西へたどると、景色は一変する。雨の多いガリシア地方。深い緑と入り組んだリアス海岸が続き、その海はタコをはじめとする魚介をもたらす。町にはケルト文化の面影も残り、乾いた南とは、まるで別の国に来たようだ。
太陽のアンダルシアと、海のガリシア。遠く離れた二つの土地をつなぐのが、今回の餃子。まずは南のガスパチョを冷やし、北のタコを香ばしく焼く。
From southern light to northern seas.
In Andalusia, blinding white walls reflect the brilliant sun amid orange shade and fountains. At Granada’s Alhambra, narrow channels run through courtyards, reflecting arches and sky—legacy of Islamic dynasties that deeply enriched Spanish culture. In Sacromonte’s cave tablaos, flamenco echoes up close, its stomping heels capturing life’s raw emotion.
Heading northwest to rainy Galicia, lush greenery and jagged coastlines yield rich octopus and seafood. With its Celtic roots, it feels like a different world.
Connecting these distant lands is today’s gyoza: chilled Andalusian gazpacho meets seared Galician octopus.



南の太陽と北の海を、ひとつの皿に。
ガスパチョは、アンダルシアの夏を乗り切るための冷たいスープ。トマトとオリーブオイルを基本に、きゅうりやピーマン、にんにくを合わせる。「飲むサラダ」と呼ばれるだけあって、喉を通れば、暑さでしぼんだ身体がシャキッとする。そこへ今回は、スペイン北西部、ガリシアの名物、タコとじゃがいもの組み合わせを餃子にして浮かべる。南の太陽と北の海を、ひと皿で出会わせる趣向だ。
①小麦粉にスモークパプリカを混ぜ、水を加えてこね、皮をつくる。
②蒸して潰したじゃがいもにオリーブオイルを合わせ、香ばしく焼いて刻んだタコを加える。塩で味を整えれば、餡のできあがり。
③皮で餡を包み、たっぷりの湯で茹でる。
④トマトジュースににんにくと塩を加えて攪拌。
冷やしてガスパチョをつくり、茹でた餃子を浮かべ、刻んだトマト、セロリ、パセリ、パプリカ、きゅうり、焼きだこをのせる。
さて、お味はいかがでしょう?
最初は冷たいトマトの酸味。そこへ、つるりとした皮からスモークパプリカが香り、じゃがいものやわらかな甘み、タコの旨みが続く。熱い餃子と冷たいスープの温度差も楽しい。南のガスパチョと北のタコ。スペインが、ひと皿に収まった。
Southern sun and northern seas on a single plate.
Gazpacho, Andalusia’s cold tomato soup known as “liquid salad,” instantly revives heat-weary bodies. Floating inside are gyozas filled with Galician octopus and potato, bringing southern sun and northern seas together in a single dish.
①Mix flour with smoked paprika and water to knead wrapper dough.②Mash steamed potatoes with olive oil, fold in seared chopped octopus, and season with salt for filling.③Wrap filling and boil in plenty of water.④Blend tomato juice, garlic, and salt, then chill for gazpacho. Top with boiled gyozas, diced vegetables (tomato, celery, parsley, bell pepper, cucumber), and seared octopus.
So, how does it taste?
First, the cool tartness of tomato. Then smoky paprika rises from the smooth wrapper, leading into sweet potato and savory octopus. The hot gyoza and cold soup contrast delightfully. Southern gazpacho meets northern octopus—Spain on a single plate.
