Australia, or “Down Under,” is loved for its vast nature (Great Barrier Reef, Uluru) and native animals.
The Indigenous Aboriginal culture, rich in artistic creation, maintains the “Dreamtime” mythology, which profoundly shapes their art and connection to the land. As the only country that is also a continent, it has reverse seasons (Christmas near mid-summer).
Popular destinations include the Sydney Opera House and Great Ocean Road, and the minimal time difference makes it easily accessible to Japanese visitors.

Made with kangaroo meat—these are Australia’s dumplings.

Australian food culture is influenced by its former ruler, the United Kingdom, and various immigrant communities.
However, there are also unique Australian dishes, one being the Aboriginal cuisine known as “Bush Tucker,” which uses meats like kangaroo, emu, and crocodile, as well as native fruits. This edition of Traveling Gyoza features a rich dish using Bush Tucker ingredients, adding an earthy nuance to the lean kangaroo meat. Here is the recipe.
① Mix flour, thyme, and water to make the wrapper. ② Mix the filling ingredients (kangaroo and beef, bush tomato, garlic, deep-fried burdock root, red wine, salt, pepper). ③ Wrap the filling in the skin and pan-fry in olive oil. ④ Arrange the gyoza on a plate with crushed bush tomato, salt, and deep-fried okahijiki as a base. ⑤ Garnish with bush tomato and salt.
Now, how is the taste?The kangaroo meat is lean and delicious with no strong taste. The bush tomato, a wild desert variety, adds a sweet-yet-slightly-acidic flavor, successfully unifying the diverse ingredients. Chef Mariko Matsui suggests pairing the dish with Lemon Myrtle Tea.
