四川料理といえば辛いものを思い浮かべるが、
麻辣餃子とは、いったいどんな味?


中国五千年のなかでも、歴史ある四川省。

In China’s 5,000 years of history, Sichuan Province stands out.

China is immense. As the world’s third-largest country, it offers strikingly diverse landscapes: megacities like Shanghai, sweeping plateaus, deserts where camels roam, misty mountain scenes like those in ink paintings, and ancient wonders like the Great Wall.
Its people are just as diverse—56 ethnic groups live across 22 provinces such as Yunnan and Hunan, with the Han as the majority. For this edition of Traveling Dumplings, we spotlight Sichuan Province.
Even before the Common Era, kingdoms like Ba and Shu flourished. After China’s unification under the Qin, the region continued to thrive as the capital of Shu. It endured through the rise and fall of the Song, Yuan, Ming, and Qing dynasties. Chengdu, the capital of Shu during the famed Three Kingdoms period, is especially renowned for its flourishing culture.
Sichuan cuisine dates back to the time of Qin Shi Huang. By the Three Kingdoms era, it was largely established.


後をひく美味しさの麻辣餃子で夏を乗り切ろう。

Beat the summer heat with the lingering flavor of Málà dumplings!

Sichuan cuisine features seven key flavors—sweet, sour, numbing-hot, hot, bitter, aromatic, and salty—and five styles: lavish banquets, standard banquets, everyday meals, home cooking, and street snacks.
Málà, a hallmark Chinese flavor, blends the numbing tingle of Sichuan peppercorn (huājiāo) with the heat of chili peppers. But enough theory— let’s make some málà dumplings!
Whole wheat for the wrappers. The filling: ground pork, garlic chives, ginger, garlic, Sichuan peppercorn, sesame oil, soy sauce, salt, and oyster sauce. Garnish with chili and garlic.

(1) Grate the garlic and ginger, then mix with Sichuan peppercorn. Pour hot sesame oil to release aroma. Add pork, chives, season with soy sauce, salt, oyster sauce and Shaoxing wine.
(2) Wrap in whole wheat skins.
(3) Sauté sesame oil, garlic, and chili peppers, and pan-fry the dumplings.

So, how do they taste?
Fiery and bold, these dumplings pack chili, peppercorn, and garlic heat. Spicy, numbing, and deeply flavorful—perfect with cold beer or rice. A dish to enjoy, sweat and all, on sweltering summer days.
