そしてアイスランドにはアイスランドラムという子羊がいる。
今回はこの肉を使った餃子に挑戦!アイスランドに、もし餃子があったらどんな味?

Icelandic dumplings: Lamb-filled delights

Iceland has Icelandic lambs. Their meat is incredibly delicious.
Icelandic lamb traces its origins back to 870 AD, when Vikings brought sheep to Iceland. Iceland being an isolated island, Icelandic lambs have remained purebred, untouched by crossbreeding for some 1,154 years, making them one of the oldest sheep breeds in the world.
Today, Icelandic lambs roam freely in natural landscapes, grazing on wild herbs, flowers, berries, and moss, and drinking pristine water. This
stress-free environment yields tender, finely textured lamb without the gaminess some dislike.
Icelandic lamb is often described as the “Chateaubriand of lamb.”
If Iceland had dumplings, they would surely feature this extraordinary lamb. Inspired by this thought, chef Mariko Matsui created her latest dumpling to highlight the exceptional flavor of Icelandic lamb.

Lamb dumplings, shaped with a nod to sheep

Matsui’s Icelandic dumplings showcase the extraordinary flavor of Icelandic lamb.Matsui says “Icelandic lamb is on a completely different level. It’s free of gaminess, leaving only pure, rich flavor. The meat is tender and finely textured. Two years ago, I made dumplings with Icelandic lamb and found it so delicious that just salt was enough for seasoning. That’s why, this time, the filling is seasoned with only salt.” I see, so Icelandic lamb is truly that delicious! So, what’s the recipe?
The filling combines 100% Icelandic lamb, dill, garlic, and salt. The wrapper, made from flour and water, is shaped into thin pasta-like strands to gently encase the filling, resembling sheep grazing on a volcanic plain.
For accompaniments, Matsui pairs the dumplings with a dip made from skyr yogurt, garlic, salt, and Thyme, alongside buttery Icelandic mashed potatoes.

The result? Simply astonishing. The lamb is free of gaminess, offering a rich, refined flavor perfectly balanced with its aroma. Whether the credit goes to the dumpling or the Icelandic lamb doesn’t matter—this dish is a true masterpiece.
