Vietnam, where SLOW and FAST are harmoniously balanced.

According to one statistic, over 600,000 Vietnamese people live in Japan, making them the second-largest foreign resident group. Given this, let’s explore Vietnam.
Vietnam is a long, narrow country stretching from north to south. Famous sights include the UNESCO World Heritage site, Ha Long Bay, the ancient capital of Hue, and Hoi An, with its beautiful lanterns. You can also explore the Mekong Delta or the northern terraced rice fields. In Hanoi, you’ll find
colonial-era architecture, a chaotic sea of motorbikes, and cozy cafes serving sweet condensed milk coffee and frothy egg coffee. Vietnam is a unique blend of nostalgia and modernity.
Now, let’s introduce the Vietnam chapter of our “Gyoza Cuisine” series.

ライスペーパーで
ベトナムらしさを包んだ餃子。

Dumplings wrapped in rice paper evoke Vietnam.

Vietnamese cuisine blends Chinese and French influences. Rice is a staple, used in dishes like pho and rice paper rolls. This recipe uses rice paper to create a unique gyoza with a shrimp and chicken filling.
For the ingredients, you’ll need rice paper for the wrapper, and for the filling, a mix of shrimp, chicken, cilantro, garlic, and ginger. The dipping sauce is made with fish sauce, lemongrass, garlic, and chili sauce.
The method is simple:
(1) Make the sauce by boiling water with fish sauce, lemongrass, and garlic. (2) Mix the shrimp, chicken, and other filling ingredients, seasoning with the sauce and salt. (3) Wrap the mixture in rice paper and pan-fry. The finished gyoza can be served with fresh vegetables and the sauce.
The taste is a fresh one that instantly transports you to Vietnam. When eaten with the fresh vegetables and the flavorful dipping sauce, it feels almost like a salad. This light and refreshing gyoza is perfect for the summer heat.
