A new culinary destination in Tokyo, MAZ was conceived by Virgilio Martínez—chef and director of Central, one of South America’s most acclaimed restaurants—together with his research collective, Mater Iniciativa. Rooted in the cultural and ecological diversity of Peru’s landscapes and ingredients, MAZ offers a gastronomic journey unlike any other. The restaurant has earned numerous accolades, including two Michelin stars in the Tokyo Guide 2024–2025, a place on Asia’s 50 Best Restaurants 2025, and recognition among the Top 100 Best Vegetable Restaurants.
